Corte Vetusto Ensamble V

Our most diverse Ensemble to date, Espadín, Mexicano, Tepeztate, Tobalá, and Cuishe come together in a once-in-a-lifetime blend. Each agave brings its own identity. This annual rotation epitomizes our respect for tradition and the sustainable use of wild agaves. Tahona milled, naturally fermented and uniquely double distilled, starting in wood-fired 250L copper pot stills then finished in 70L ancestral clay pot stills.

Key Highlights:

  • Double Distilled to Proof: First in 250L copper stills, then second in ancestral 70L clay pot stills
  • Annual Rotational Release: Never repeated. Less than 750 liters produced globally

Agave:

Equal parts ESPADÍN (A. angustifolia), MEXICANO (A. sp),TEPEZTATE (A. marmorata), TÓBALA (A. potatorum), CUISHE (A. karwinskii)

Tasting Notes:

Aroma: Wet clay and cooked agave open to crushed river stone, green herbs and a wisp of ember smoke.

Taste: Full and earthy: damp limestone, dried stone fruit, cacao nib and a saline, mineral core.

Finish: Long and dry, terracotta and wet slate lingering over soft roasted agave and a gentle peppery lift.
